Chocolate Chip Cookie Cake



I have made three cookies cakes in the last couple of months and for some reason they have gone over much better than if the same amount of cookie dough had been split into regular cookies. Try this recipe out for your next birthday party or get together with friends.


What You’ll Need…

1 Cup (2 Sticks) Softened Butter
¾ Cup Granulated Sugar
¾ Cup Brown Sugar (Packed)
1 Teaspoon Vanilla Extract
2 Eggs
2 ¼ Cups Flour
½ Teaspoon Baking Soda
½ Teaspoon Baking Powder
½ Teaspoon Salt
2 Cups Chocolate Chips (Lately I have been doing a mix of milk or dark chocolate and white chocolate.)

Preheat your oven to 375.

In a medium mixing bowl cream the butter, sugars, and vanilla. Once the mixture is creamy add in the eggs and beat until the eggs are fully incorporated.

Add in the dry ingredients and mix until combined well using a wooden spoon. Lastly add in the chocolate chips and mix until they are distributed.

Press the dough into a well-greased baking dish (buttered and flour works best).

Bake at 375 for 30-35 minutes.

After removing the cake from the oven allow it cool completely, especially if you will be icing the cake.

Cut the cake and enjoy!

Meatloaf Muffins



I personally love meatloaf and a couple of weeks ago we had decided to have meatloaf for dinner. By the time that I got started on making the meatloaf mixture I didn’t have the hour required to bake it in a loaf pan, so I pulled out the cupcakes pans. The same great meatloaf taste in a quicker baking and easier to handle size.

We just had ours with ketchup on top, but you could easily top it will mashed potatoes if you wanted – it would really look like a cupcake or muffin then.

You can also use any meatloaf/meatball recipe for this, but this is our go to meatloaf recipe that we also use for meatballs.


What You’ll Need…

1lb Ground Meat
14oz or 5 Links of your Favorite Sausage
1 Egg
½ Cup Oats
1 Teaspoon Black Pepper
1 Teaspoon Garlic Powder
1 Teaspoon Chili Powder
1 Teaspoon Ground Mustard
½ Onion Soup Mix Packet
½ - 1 Cup Grated Cheese
Ketchup (For the top)

Preheat your oven to 350.

Add all of the ingredients to mixing bowl, removing the sausage from the casings. Using your hands gently mix the meat mixture until combined – do not over mix or the meat will become tough.

Portion the meat into greased cupcake tins – this will make 12 “muffins”. Top with ketchup and bake for 30-35 minutes.

After removing the “muffins” from the oven allow them to cool for about 5 minutes so that you do not burn your mouth.
