As
I’ve mentioned before, one a week we have a meatless day at our house. Well,
last week I came up with something new, and it was quite tasty. It does take a
little time to make, but it is definitely worth it.
What
You’ll Need…
2-
15oz Cans Beans (Black or Pinto) or 1 Cups Dry Beans (Cooked this will yield 3
cups of beans.)
½
Cup Dry Quinoa
1
Cups Water
¾
Cup Baked Beans (Your Favorite kind)
1
Egg
Season
Salt (To taste)
Pepper
(To taste)
If
you cook the beans yourself, follow the instructions on the package.
To
cook the quinoa add the quinoa, water, and spices to a sauce pan and allow to
cook over medium low heat until the water has absorbed and the quinoa is fluffy
– stir occasionally.
Allow
the quinoa to cool slightly so that you can touch it with your hands.
Using
a potato masher, mash the black or pinto beans – leave some chunks, though.
Combine the beans, baked beans, quinoa, and an egg.
Using
your hands form patties.
Place
the patties in a hot skillet and allow to cook for 4 minutes before flipping.
Allow the patties to cook for an additional 4 minutes.
