Grill Peach Pies



Life has been crazy busy lately, but I finally have time to share an awesome recipe with you all. Peaches are delicious and ripe right now, and grilling season is in full swing – combine the two and you have something amazing.


What You’ll Need…

1 ½ Peach (per person)
1 Full Recipe Pie Dough (Or 1 box store bought pie dough.)
Brown Sugar
Cinnamon


Pie Dough:
2 ½ Cups Flour
1 Cup (2 Sticks) Butter (Cut into cubes.)
1 Teaspoon Salt
1 Tablespoon Sugar
½ - ¾ Cup Very Cold Water

Add flour, salt, and sugar to a mixing bowl. Carefully cut the butter into the flour mixture until it is the size of peas. Add in the water about a tablespoon at a time until the dough starts to come together. Turn the dough out onto a floured board and knead it until a ball forms. Careful not to make the dough too warm. Wrap the dough in plastic wrap and allow it to chill in the refrigerator for at least 30 minutes.


For the peaches:

Wash the peaches and using a sharp knife cut once around the outside and twist it to remove it from the pit. Drizzle the peaches halves with oil and place flat side down on your grill.

Cooking time will depend on the temperature of your grill – but about 10-15 minutes should be good.

While the peaches are cooking roll out the pie dough and cut out circles that will fit inside your baking dishes, but will cover the entire inside.

Once the peaches are slightly soft and have good grill marks remove them from the grill and allow them to cool slightly so that you can touch them.

Cut the peaches into slices place them into individual baking dishes. Sprinkle cinnamon and brown sugar on top of the peaches and cover with a circle of pie dough. Cut a small hole in the center of each pie so that the steam can escape.





Place the pies on the grill and close the lid to allow them to bake.

With a charcoal grill starting at around 450-475 it will take about 25-30 minutes for the pies to bake.

Enjoy the pie by itself or with ice cream.
