Burrito Casserole

Burritos are pretty much anything wrapped up in a tortilla, and casserole is well pretty much anything put in a baking dish and baked. One day a few weeks ago I decided to combine the two, and well, the results were delicious.
What You'll Need...

6 Medium Flour Tortillas
8 Small to Medium Boneless Skinless Chicken Breasts
1 1/2 Cups Baked Beans
4 Cornbread muffins (Can be replaced by 1 1/2 Cups rice.)
4 Medium Mushrooms (Sliced)
1 1/2 Cups Corn
1 Bell Pepper (Diced)
1/2 Medium Onion (Diced)
2 Medium Tomatoes (Diced)
1 1/2 - 2 Cups Grated Cheese (Your favorite kind)

Garnish:
Your Favorite Salsa
Shredded Lettuce
Sour Cream

Start out by cooking the chicken breasts (and the rice if you're using rice) and allowing them to cool enough so that you can work with it. While the chicken is cooking chop and combine the corn, tomatoes, onions, and peppers.

When the chicken is at a temperature that you can work with cut it into thin slices, but make sure that they are also bite-size in length.

In a greased 9 x 13 baking dish place two tortillas. Follow the tortillas with layers of half of the beans, chicken, vegetables included the mushrooms, crumbled cornbread or rice, and 1/3 of the cheese in that order.

      


On top of the layer of cheese place two more tortillas and repeat the above layers.
      


Place the remaining two tortillas and the last 1/3 of the cheese on the very top. Cover with foil and bake at 350 for 45 minutes. Remove the foil and allow to bake for an additional 15 minutes.

After removing the casserole from the oven allow it to rest for at least 5 minutes.
     

Once a portion is plated top with lettuce, salsa, and sour cream. Enjoy!

Bean Burgers



As I’ve mentioned before, one a week we have a meatless day at our house. Well, last week I came up with something new, and it was quite tasty. It does take a little time to make, but it is definitely worth it.


What You’ll Need…

2- 15oz Cans Beans (Black or Pinto) or 1 Cups Dry Beans (Cooked this will yield 3 cups of beans.)
½ Cup Dry Quinoa
1 Cups Water
¾ Cup Baked Beans (Your Favorite kind)
1 Egg
Season Salt (To taste)
Pepper (To taste)

If you cook the beans yourself, follow the instructions on the package.

To cook the quinoa add the quinoa, water, and spices to a sauce pan and allow to cook over medium low heat until the water has absorbed and the quinoa is fluffy – stir occasionally.

Allow the quinoa to cool slightly so that you can touch it with your hands.

Using a potato masher, mash the black or pinto beans – leave some chunks, though. Combine the beans, baked beans, quinoa, and an egg.

Using your hands form patties.

Place the patties in a hot skillet and allow to cook for 4 minutes before flipping. Allow the patties to cook for an additional 4 minutes.

Serve on buns with all the fixings and fries… enjoy!

Mountain Pies



Even though it's still summer for another couple of weeks, since most schools have started back already a lot of people consider it fall already. One thing that comes to mind during the fall, besides pumpkin, is campfires. While s'mores are a great campfire treat mountain pies are also quite delicious. Today I'll give you an example of two different kinds of mountain pies, but you can really make and combination of flavors you like.

* You will need a mountain pie maker or camp sandwich maker as they are labeled.*

Chocolate Peanut Butter Mountain Pies:

2 Slices Sandwich Bread
1 Tablespoon Butter
Peanut Butter
Chocolate Chips

Spread a generous amount, about half a tablespoon, on the outside of each piece of bread and place them butter side down in the mountain pie maker.

On one piece of bread spread as much peanut butter as you like, but be careful not to get it too close to the edges or it will ooze out. Place the chocolate chips on top of the peanut butter and then close the maker.

Place the mountain pie maker in the coals in your camp fire or on the grate in your grill – if you are using a grill close the lid. Allow the pie to cook for 5 minutes before flipping the mountain pie maker over and allowing it to cook for an additional five minutes.

Remove the maker from the fire/grill and carefully open the maker, removing one side, and turn your pie out onto a plate. BE CAREFUL – it will be extremely hot. Once it has cooled slightly, enjoy your pie!


Fruit Pie Mountain Pie

2 Slices Sandwich Bread
1 Tablespoon Butter
Pie Filling (Your choice of flavor)

Spread a generous amount, about half a tablespoon, on the outside of each piece of bread and place them butter side down in the mountain pie maker.

Spoon a generous amount of pie filling onto one piece of bread, don’t allow it to get too close to the edges or it will ooze. Once the filling is in close the maker. 

Place the mountain pie maker in the coals in your camp fire or on the grate in your grill – if you are using a grill close the lid. Allow the pie to cook for 5 minutes before flipping the mountain pie maker over and allowing it to cook for an additional five minutes.
